Brunswick Stew

Ingrediënten:


5 lb. hen3 No. 2 cans tomatoes
1 8-oz. can tomato paste2 No.2 cans okra
2 No.2 cans corn3 lbs. potatoes
3 large onions1 stick oleo
red peppersalt

Preparation:


Stew hen until meat falls from bones; tear meat from bones and place in large heavy boiler along with all broth. Add tomatoes, tomato paste, okra, onions cut fine, and salt and pepper. Cook slowly for about 2 hours. Cook and mash potatoes (instant potatoes may be used). Add mashed potatoes and corn to the chicken mixture and cook longer, stirring occasionally to prevent sticking. Taste for seasoning, add butter or oleo. Longer it is cooked the better it is, but may be eaten about 15 minutes after adding potatoes. Freezes well.
