Roast leg of lam

Preparation:


Use heavy roaster for top of range roasting. Have butcher cut off bone at first joint. Do not remove fell; rub with garlic. Heat roaster over high heat until hot. Reduce heat to medium; add meat; brown on all sides. Reduce heat to low; cover; cook 35 minutes per pound. Season with salt, pepper near end of cooking. Serve with mint jelly.
