Roast lamb shoulder
Number of Servings - 9
Ingredients:
1/2 t. salt
1/4 t. pepper
1 T. dry mustard
3 T. flour
1/2 c. cold water
4-5 lb. lamb shoulder, boned and rolled
1 c. currant jelly
Preparation:
Mix seasonings and flour; add water and blend. Spread over lamb shoulder. Roast uncovered in slow oven (300'F.) 30-35 minutes per pound, or 3 1/2 hours. Spread with currant jelly the last hour. Baste every 15 minutes.
