Sauteed doves, carmel







Number of Servings - 4



Ingredients:


6 doves1/2 c. butter
2 small onions, minced2 cloves garlic, minced
1/2 bay leaf1 t. peppercorns
1 c. white wine1 c. water
2 c. heavy cream1/2 t. salt
1/8 t. pepper1 t. chives

Preparation:


Cook butter with onions, garlic, bay leaf and peppercorns 8 minutes, stirring constantly. Saute doves in mixture until well browned. Add wine and water and simmer 30 minutes. Remove doves, strain sauce into casserole and add cream slowly. Add remaining seasonings and dove, cover and heat to boiling point. Serve immediately.
