Roast duck and cumin rice

Ingredients:


1/3 c. chopped onion1/4 c. diced green Pepper
2 T. bacon drippings1 c. uncooked rice
2 10 1/2-oz. cans consomme1 T. Worcestershire
3/4 t. salt3/4 t. cumin seed

Preparation:


Rice-In a 3-quart container, on medium heat, saute onions, pepper and rice in bacon drippings until golden brown. Add consomme, Worcestershire, salt and cumin seed. Cover with tight lid, bring to a boil. When steam escapes, turn burner low and cook for 20 minutes. Duck-Soak ducks in salted water 1/2 hour. Dry and rub with salt and black pepper. Stuff with onions, carrots, apples and celery. Cook in 400' F. oven.
